We're gathered in Denver, CO today for the BBQ brisket smoking competition, held every year on June 1. Participants in this year's competition include Matthew and...... yep, Matthew is the old smoker participating. The atmosphere is tense -- Matthew is sitting in his lawn chair (in the shade) drinking random beers found in the fridge. The Rockies are on, 1-0 Cubs in the top of the second. Those spotted in the crowd include Maya and....... yep, Maya is the only spectator.
On the grill today is a piece of beef brisket (2.5 pounds) found last night in the freezer. While Matthew hauled out the smoker at 7AM, it wasn't until 11:00 when the first match was lit, and 12:30 when the brisket was started. At a constant 220 Fahrenheit, figure about 2 hours 30 minutes cooking time.
