I found this granola recipe in Cooking Light a few years ago. I am working on stocking our freezer with dinners and snacks we can eat when baby girl Alley arrives and it seemed like a good snacking item. It's easy, delicious and doesn't have any seeds, just nuts. If you've ever eaten too many pumpkin seeds, you know why that's good thing.
6 cups oatmeal
¼ cup chopped almonds
¼ cup chopped pecans
2 tbsp. brown sugar
¼ tsp. kosher salt
⅓ cup maple syrup
¼ cup honey
¼ cup pineapple juice
½ tsp. almond extract
¼ cup dried cranberries
¼ cup chopped apricots
Preheat oven to 300 degrees.
Combine first five ingredients in a large bowl. Add syrup, honey, juice, and almond extract; toss well. Spread mixture evenly onto a cookie sheet coated with cooking spray. Bake at 300 for 45 minutes, stirring every 15 minutes. Stir in apricots and cranberries. Cool completely. Store in a zip-lock bag.
