Awhile back I posted something on new restaurants in Denver I would like to try. Over the holidays, we had a great dinner at one of the listed restaurants, Fruition, and I wanted to note what I liked and disliked about my meal:
- Potato-Wrapped Oysters Rockefeller
- Pan Roasted New Zealand Sea Bass with Tender Leeks & Black Truffles, Yukon Gold Potato, Roasted Squash Puree
- Caramelized Banana Pudding with Fresh Bananas, Chantilly Cream, Warm Double Fudge Cookies

The Sea Bass was unbelievable -- like Lark and Pear in Seattle, Fruition places more focus on the quality of the ingredients, preparation and presentation than the portion. I thought the serving was big enough to satisfy my appetite, but small enough where the filet and its sauce did not overwhelm the other vegetables on the plate.
Oysters -- very good and noticeably fresh. Each dish was uniquely presented (especially Lisa's pasta carbonara) and the oyster's were no exception. Also, the sauce did not overpower the oysters.
The service was second to Mizuna and Barolo Grill (which means it was excellent). The staff was attentive with water, and we had no difficulty getting our check, ordering (wine or food). Bread was sort of difficult.
The dessert -- the entire table was impressed with the unique dessert options. The cookies in my dessert were warm, and were fantastic when dipped into the noticeably freshly-made pudding.
Disliked:
Coffee -- I don't believe there was an espresso option. However, I had a glass a milk that went well with my dessert.
Bread -- what is it with some restaurants being stingy with bread? We each got a small piece to start off with, and I somehow felt rude asking for additional bread...I don't like that feeling
Wine -- I had a very good, well-portioned Pinot Noir -- however, I felt it could have been served at a little cooler temperature...(see this)
We had a fantastic meal -- everyone enjoyed everything they ate and drank. We left the restaurant on the cold night feeling great. I would absolutely recommend Fruition to any foodie -- it would be an easy decision to return -- we'll certainly be back.
